What Vegans Eat – Day 1472

First Meal: It’s opening night for A Midsummer Night’s Dream. I plan on attending, but first a visit to my friend Nancy’s home in San Francisco. I had a quick bowl of organic Rolled Oats with organic Strawberries, organic Raisins, organic Walnuts, organic Pumpkin Seeds and organic Soy Milk before Gary took me to the Caltrain Station.

 
Second Meal: My midday meal was more of a snack. Nancy’s mom was also visiting and her son Robby was home. It was nice to sit, have tea and chat with the family for a few hours. We nibbled on Apples, Baby Carrots, Hummus and Nuts.

 
Third Meal: I got back to San Jose on Caltrain and had an hour before the show was to open. I checked how long it would take to get there. I could call a Lyft but it was only a 30 minute walk away. I decided to walk. It was a great idea after so much sitting.
 
The show was delightful. Gary is a fine director and always discovers ways to make magic. After the show we came back to the house to eat. My Purple Rain Soup was waiting for me, with organic Purple Sweet Potatoes, organic Tofu and organic Red Onions.

 
I also made an organic Arugula Salad with Avocado, Black Olives, Nutritional Yeast and organic Tahini Dressing.
