What Vegans Eat – Day 1478

First Meal: After a family meeting at the mortuary for the upcoming funeral it was time for lunch. For those who have followed this blog for a while should recognize these next photos. Whenever we visit Khanh’s we always order the same dishes. They always look and taste the same too, but the food is always fresh and good. We started with Tofu Fresh Rolls.

 
Gary got his Rice Vermicelli and Vegetables Combination.

 
And I chose the Tofu with Shiitake Mushrooms and Vegetables.

 
Second Meal: Today’s salad is RED. I can’t seem to get enough of those anthocyanins lately. We had an organic Radicchio Salad with Avocado, organic Red Onions and organic Tahini Dressing. We also had organic Pink Chili Beans, and creamy, organic Polenta.

 
For dessert we had some very sweet, organic, baked Sweet Potatoes.
 
Gary cousin Nancy had picked us some Oranges and Lemons from her trees and brought us two bags full. Gary made a second sweet treat, with Oranges, organic Blueberries, and organic Strawberries. It was refreshing, light and yummy.
