What Vegans Eat – Day 1484

First Meal: I’ll be leaving to go back home tomorrow evening, alone. Gary will be staying here in San Jose to do some theater work and help with details related to his father’s passing. We’re feeling a bit sad that we’ll be separated. Gary set out what I called a “hotel-style breakfast.” We had Gary’s Blueberry Bread, Banana, Oranges mixed with Blueberries, and Apricot Butter with Tahini.

 
Second Meal: The weather is dreadful, cold with lots of rain. We wanted to get some exercise so we went to the mall and walked all around, upstairs and downstairs and upstairs and downstairs. And we didn’t buy anything! We had worked up an appetite. We got back to the house and warmed up all the leftovers, Brown Rice, Tempeh in Tomato Sauce, Purple Sweet Potatoes and Japanese Yams. I had defrosted a jar of Green Juice earlier, made with Kale, Celery, Carrots and Lemon. It was so satisfying.

 
Third Meal: Our late lunch stuck with us the rest of the day. Late in the evening Gary made a quick Hummus and served it with Mary’s Gone Crackers.
