What Vegans Eat – Day 1491

First Meal: It’s the day of my annual physical. I go for a number of reasons. One is to get blood drawn for a CA125 test, the marker for ovarian cancer. It’s been over twelve years since I was diagnosed with ovarian cancer. Of course I am thrilled to have that behind me. The one thing I do now is get my blood checked once a year, just to be sure. For many decades I did not have one primary care provider that I always went to. I moved around, my insurance plans changed, it just wasn’t possible. Now I have a doctor I have been seeing annually for about 4 or 5 years. I like her a lot and it’s good to know she’s there. I decided to fast in case I needed to for any other blood tests. Of course after my exam I was hungry and dreaming of Kale Salad. I made a beautful one, with gorgeous, organic Lacinato Kale, organic Tahini Dressing and some Everything Flatbread on the side.

 
While I ate the salad, I cooked my Purple Rain Soup, made with organic Tofu, organic Purple Sweet Potatoes and organic Red Onions.

 
Second Meal: To mix things up a little bit, I finished the Purple Rain Soup for dinner, adding in organic Porcini Mushroom Powder.

 
Green Juice: Green juice is back in my life and I am happy. Today’s juice had organic Kale, organic Celery, organic Carrots, and organic Lemon.
 
Third Meal: My evening treat was a frozen, organic Mixed Berries Shake with Soy Milk and Cocoa Powder. I deserved it! My blood tests results were logged into my portal. All is well!
