What Vegans Eat – Day 1499

First Meal: This morning I cooked organic Steel Cut Oats in water with an organic Pear, some organic Raisins and Pumpkin Spice.

 
Second Meal: It rained all day yesterday. I was feeling blue thinking I would not get any sunshine on this Florida trip. The sun peaked out of the clouds this morning and I went out for a run. At lunchtime, I was looking forward to finishing my Purple Rain soup with organic Purple Sweet Potatoes, organic Tofu and organic Red Onions.

 
I made a salad too with organic Arugula, organic Tomatoes, Avocado, Green Olives, organic Red Onion, organic Walnuts and Apple Cider Vinegar.

 
For dessert I had an organic Banana.

 
Third Meal: I enjoyed the Edamame I had two days ago so I made some today.

 
I’m a big soup eater. I find soup is easy to make and satisfying. I made another soup for dinner with organic Red Lentils, organic Carrots, organic Celery, organic Lemon, dried herbs: Parsley Rosemary, Thyme, Basil, and, Turmeric and Black Pepper.
