What Vegans Eat – Day 1501

First Meal: I could have put this meal in yesterday’s post. I arrived home in New York very late last night, or early this morning. The flight arrived at 12:30am. When the Fort Lauderdale JetBlue airline staff announced at the gate that we had a full flight and they were checking carry-on bags for free, I was considerate and signed up my carry-on wheelie. When we arrived in New York, my bag was nowhere to be found. I went to the baggage office to report my missing bag. The representative made me return to the carousel three times to make sure my bag wasn’t there before writing up my claim. I got home very late. I spoke to Gary in California and he convinced me to make waffles before going to bed. I made Garbanzo Bean Flour Waffles and there was plenty of Fig Butter to schmear all over them. I had two and saved one for later.

 
Second Meal: I went to sleep at about 3:30am and got up late. My luggage was found and delivered to the apartment. Hallelujah. For lunch I had the last waffle with an organic Tahini/Fig Butter blend, served with organic Oranges, organic Pears and organic Berries. I couldn’t eat it all and set the berries aside for later.

 
Third Meal: There were some Pinto Beans in the freezer that I defrosted and cooked with organic Corn, organic Spinach, organic Bell Pepper and organic Red Onion. The Orange Bell Pepper looked so good raw that I only used half of it to cook. The rest I cut in strips to munch on. The mixed berries I didn’t eat earlier were my desert.
