What Vegans Eat – Day 1502

First Meal: Good morning. Trying to get back on track now into a healthy routine now that I am home in New York for a while. My first meals was an odd mix of foods that I enjoyed a lot! I had sliced, organic Oranges sprinkled with unsweetened, organic flaked Coconut, an organic Apple and a bowl of cold, organic Black Beans topped with an organic Tahini/Fig Butter and more coconut.

 
I had soaked organic Almonds over night with the intention of making Almond Ricotta. This is one of my most favorite foods. When I make it, I put it on everything as you will see in the next few days.

 
Second Meal: I boiled some organic Purple Sweet Potatoes. When they were done, I warmed up the cooked organic Black Beans in the purple sweet potato water. I made some fast Corn Pancakes with organic Corn Meal, organic Flax Seeds and water, and heated up some frozen organic Spinach. I piled everything on top of the corn pancake and topped it with the Almond Ricotta. This was a gorgeous creation and the combined flavors were spectacular.

 
Yes, I’ll have another.

 
Green Juice: I made a lot of Green Juices over a week ago with organic Kale, organic Broccoli, organic Celery, organic Carrots and organic Lemon and froze them. I am grateful every day when I take out one to defrost. It’s a little gift from me, to me!
