What Vegans Eat – Day 1509

First Meal: I have two major tasks today: read at least 1/3 of Eat To Beat Disease for my podcast interview this Tuesday; and start preparing our income tax filing. I decided to read first. I sliced two organic Oranges and enjoyed them as I made Garbanzo Bean Flour Waffles.

 
I made half the recipe which resulted in three waffles. I had two and save the third for tomorrow. They are exceptionally good topped with our homemade Fig Butter.

 
Second Meal: Once finished with the reading I had planned for today I was hungry. I made a quick lunch, using the organic Tempeh and organic Tomato Sauce I prepared yesterday cooked them with more strained Tomatoes, organic Red Onions and organic frozen Corn.

 
Snack: Now working on the taxes. Ugh. I took a break and ate an organic Apple.

 
Green Juice: Still doing the taxes, I stopped to sip on a green juice with organic Kale, organic Celery, organic Broccoli, organic Carrots and organic Lemon. I love this juice. I had some organic Almonds with it.

 
Third Meal: It’s getting late but I need to have a salad. I made one with organic Mesclun Greens, organic sliced Pears, organic cooked Black Beans, organic ground Flax Seeds, Nutritional Yeast and Tahini Balsamic Dressing. I got back to work and got the taxes to a good place where I just need to review a few items.
