What Vegans Eat – Day 1530

First Meal: Gary was in the mood for fresh bread. He made me his Blueberry Flatbread recipe that he created while in California for three months. Sweetened with Blueberries and Dates and generously sprinkled with cinnamon, it’s yummy.

 
Second Meal: We are going to see The Cradle Will Rock tonight, the next show on my birthday theater tour. I made a big organic Salad with Spring mix, Tahini Dressing, homemade Red Cabbage Sauerkraut and Pumpkin Seeds to keep us going for the evening.

 
Third Meal: The show was only 90 minutes and we were ready for food when we got home. Breakfast for supper sounded so good. I’m lucky to have Gary who made it happen. We had Sweet Potato Home Fries, with Purple and Japanese Yellow Sweets.

 
And he served this gorgeous dish that we devoured – Baked No-Egg French Soufflé Omelette with Kale and Onions. It’s one of his best and published in the Living the Farm Sanctuary Life cookbook.
