What Vegans Eat – Day 1536

First Meal: Gary had a box of food he left here. He was in California for three months and came home for a quick trip before we both returned together to San Jose. He had left Polenta, Buckwheat, Lentils, gluten-free flour and garbanzo bean flours, nutritional yeast, herbs, spices and pasta. We are set. We picked up a few things at Trader Joe’s yesterday. I made an organic Polenta Cereal with organic Bananas and organic Raisins.

 
Green Juice:
We still needed a few more things, like Greens! We made a quick trip to Whole Foods and picked up some Green Juices while we were there. We prefer making juice fresh but when traveling, these Evolution Green Juices come in handy.

 
Second Meal: We both have been feeling very hungry the last few days. I didn’t want to eat out all the time but we were close to the Veggie Grill… That’s a good enough excuse to go there, right? Gary ordered the Falafel Wrap.

 
I had a Rustic Bowl with Farro, Fava Beans, Broccoli Pesto, Mushrooms, Squash and Tomatoes. It was very tasty but we both agreed the portions here are TOO SMALL! It was a light snack.

 
Third Meal: When we got back to the house, I wanted to make big food. It’s tricky when you don’t have plates, bowls, utensils and pots and pans! I got creative with the one borrowed pot and made Red Lentils with spices, a big Romain Lettuce Salad with Tomatoes, Avocados and Tahini Dressing and Purple Sweet Potatoes. We were satisfied.
