What Vegans Eat – Day 1563

First Meal: It’s so good to have Gary back home again! He made us our Rolled Oats Cereal with Raspberries, Coconut, Pumpkin Seeds, Walnuts and Apples, all organic of course.

 
Tea Break: We won the lottery! We’ll be seeing Harry Potter the Cursed Child Part I tonight and Part II tomorrow. What a great way to celebrate Gary’s birthday week. We went to a coffee shop called La Colombe in SoHo in the afternoon to meet a theater colleague of Gary’s to discuss future projects. I had a Turmeric Ginger Tea. I loved that this place served the beverages in beautiful porcelain cups rather than paper!

 
We took a subway ride to midtown for a quick dinner at Beyond Sushi. We shared the seasonal sushi with black rice, blackened goguma, avocado and baby arugula topped with lemon dill fava beans, puffed quinoa and tomato powder and lemon saffron sauce. So, so good!

 
I had my favorite Chili Mushroom Soup with Glass noodles. (Braised shiitake, nori, portabella, enoki mushrooms, baby spinach, roasted garlic, hijiki)

 
Gary ordered the Coconut Curry Soup (Butternut squash, nori, asparagus, roasted chickpeas, baby spinach, chili oil, chili strands, and makrut lime leaf.)

 
Snack: Harry Potter The Cursed Child Part I was very entertaining. Only 68 million dollars went into this production to create magic, so much magic. Magic is expensive but so much fun. We came home and shared an organic Pear.
