What Vegans Eat – Day 1564

First Meal: There are still some Staffordshire Oatcakes remaining which makes breakfast today easy. Served with organic Apricot Butter, organic Mandarin Oranges and organic Maté.

 
Second Meal: Before going out to see Part II of Harry Potter and the Cursed Child on Broadway I made a late lunch of organic Pinto Bean Tomato Stew, Guacamole, small boiled organic Yellow Potatoes and sautéed organic Oyster Mushrooms with organic Onions and organic Garlic. I cooked the potatoes in a vegetable broth made with organic Celery and Carrot fiber leftover from juicing. I added organic dried Parsley to it too.

 
Third Meal: OMG! The second part of Harry Potter and the Cursed Child was even better than Part I. We really enjoyed it. Gary’s old friend Don is working the lighting for the show so he met us afterwards. We went to PS Kitchen for drinks and some food. Don ordered the Buffalo Maitake Mushrooms which were bursting with flavor. Gary tried a bite and for a guy who doesn’t like mushrooms, he said he might order them in the future! I went with the Kale Salad with Farro and Butternut Squash which was perfect for me. The first time we came here there were no salads on the menu. This is an excellent addition.

 
Snack: We were a bit wired when we got home. We had green juices and a few more yellow Potatoes with Guacamole.
