What Vegans Eat – Day 1570

First Meal: I’m off to mom’s today. Lots to do there. For one, I will be bringing some boxes to store in her garage. After unpacking 34 boxes of Gary’s mom’s treasures we have lots of boxes and lots of packing material. I am not ready to send them to a landfill. They will be stored at mom’s for the next move. I left early to stop by Goodwill and Trader Joe’s first. I had not eaten all day. By the time we sat down for lunch it was almost 3pm. I made a quick Romaine Lettuce Salad with Green Olives, Tomatoes and Walnuts and pour Balsamic Vinegar all over. I vacuumed it before taking a photo.

 
We also had some baked, or perhaps over-baked Potatoes.

 
Second Meal: I had to get home early because we had tickets to see My Fair Lady. I made a quick soup of leftovers – Millet, Purple Potatoes and Japanese Yams plus Eggplant and Peppers.

 
Third Meal: The production was lovely overall. We got home and had to snack – Rice Cakes with Pears, Apricot Butter and Peanut Butter, a late night favorite.
