What Vegans Eat – Day 1646

First Meal: To make up for the crunchy (okay, gritty) Sorghum Waffle experiment the other day, today, I made Light and Crispy Waffles with Oats. I made a double batch and almost screwed it up by adding water for one recipe, not two. I poured the thick batter into the waffle iron when I realized the mistake and quickly scooped it all out. I blended in the additional water and all was well with the world. Bananas and Peanut Butter Cream can make most things right with the world.

 
Second Meal: We are resisting cooking more since we have come home. Obviously we need real a vacation. Perhaps it will come soon. In the meantime, there’s Green Zenphony. The Bean curd Platter Supreme for Gary.

 
I ordered the Veggie Pork Fried Rice. OMG! What a treat. It’s rare to be able to order a vegan fried rice and this one knocked it out of the park.

 
We also ordered the Chinese Broccoli like we always do. It looked just like it always does. But the taste was weird. I tried a few pieces, still weird. I had Gary try some and he agreed. It was too unpleasant to eat so I sent it back. We have never done this! We love this dish and can’t imagine what went wrong. Hopefully, when (and if) we try it again it will be okay.
