What Vegans Eat – Day 1660

Share

First Meal: Breakfast was easy with leftover Garbanzo Bean Flour Omelets from last night, served with sliced Apples.

A matinee, a Pinter play! Today we saw the play Betrayal with Tom Hiddleston, Zawe Ashton, and Charlie Cox. We have been so lucky this year seeing some incredible once in a lifetime kinds of theater and this was one of those. This NY Times review says it all.

Green Juice After the show we walked to Westerly for Green Juices and to pick up a few items for dinner. We’re making pizza tonight!

Westerly makes the greenest, cleanest best juices.

Second Meal At home, still on air from seeing great theatre, I got the pizza dough rising and prepped the veggies. We ate al fresco, on the terrace and opened a bottle of organic OKO Prosecco. This is good living! The pizzas had Miyoko’s Vegan Mozz, Roasted Bell Peppers, Onions, Eggplant, Garlic, Tomatoes and Gary’s Creamy Pesto.

My pizza had mushrooms too.

I don’t want the night to end. As the sun set we stayed out on the terrace. Gary made Teeccino.

I finished a perfect dinner with frozen Mango Banana Soft Serve.
