What Vegans Eat – Day 1662


First Meal: What are we going to do today? We’re driving up to Woodstock on an adventure. First, a feeding. I made a soup of leftovers, Creamy Pesto, Mushrooms, Tomatoes and Scallions.

Next we had Roasted Vegetables and Baked Tofu with Pesto on Tortillas.

Gary had packed bottles of tea, Apples and Figs of for the ride.

Second Meal: After walking around the town center we stopped at the Garden Cafe for lunch. It was a beautiful day and we sat outside. We both got the Housemade Burger with Roasted Herbed Potatoes and a pickled Beet and Cauliflower side. So good!

And Green Juices! They were fresh and energizing.

We sat in the space and breathed the air. Ahhhhh.

Desserts looked good but we opted for a Rooibos Maple flavored tea.

There was a production of the Shakespeare play Pericles at 5:30pm. I didn’t want to hurry home and drive in traffic so we stay and watch the play.

Third Meal: After the show, we drove home, found a parking spot and sat down for some late night Corn on the Cob.
