What Vegans Eat – Day 1668


First Meal: I brought mom’s car to Toyota for a repair, got a rental car while it was being fixed and then went to mom’s home for a visit. I made her a big pot of Brown Rice that I put in small containers for her to use when she wanted. And I made a big pot of Vegetable Soup. When it was done we each had a little.

She was out of Ice Cream and made a food order so she would get it along with some other items later in the day. In the meantime, I whipped up some Frozen Vanilla Banana Soft Serve.

Second Meal: When I arrived home I found a big fat parking spot for my big fat rental car. It’s a good parking Karma day. I couldn’t wait to eat. We started with a big fat Kale Salad.

Then we finished up the remaining Healthy World Burgers we made a few days ago, topped with Miyoko’s Vegan Mozz and served with Baked Fries. I had sautéed onions and mushrooms on mine.

For dessert we had fresh, organic Strawberries. They were the best.
