First Meal: Time to visit with mom. It’s my mom and dad’s wedding anniversary today. They married in 1953. I promised Mom we would visit dad’s grave at the cemetery today. When my dad was buried, my sister had the idea of “planting” bowling pins around his gravestone. I brought extra pins with me and tidied up the ones that were there. Afterwards we went to the Cheesecake Factory with mom’s next door neighbor Laurie. I had my traditional Vegan Cobb Salad.
Second Meal: Back at mom’s house I check her food supply and made an order for food delivery. She always wants bananas but doesn’t seem to eat them. I find them in the refrigerator or freezer and I’ll make us a big smoothie with them. Today’s smoothie was made with frozen Bananas, frozen Raspberries and Blueberries, Almond Milk and Vanilla. She liked it.
Second Meal: We are really clearing out the cupboard when we make pasta. And it’s a treat when we do. Brown Rice Pasta with Green Peas, Nutritional Yeast and a little of Miyoko’s Cultured Vegan Butter.
The Kale with Red Onions today were incredible. We have this dish a lot but I don’t ever remember it tasting this good.
