We arrived home from California early this morning on a red eye. It’s going to be a long day. We drank a little tea and took a long nap. I wanted to visit my mom today since I haven’t seen her in a week. I got up at about 1pm and dragged myself out of the apartment. When I got to mom’s she told me her right ear had been bothering her. I turned on the flashlight in my phone and examined her. It looked like there was a load of wax in her ear.
First Meal: We both sat down for a simple meal – one sweet potato each. As we ate I went on the computer to make a doctor’s appointment for her. Finally, I called an urgent care clinic and they could see her right away. Mom was making us green tea and I told her we had to go. I had her take her cup with her as I drove us to the clinic, called GoHealth.
They were wonderful! The woman at the desk knew who we were when we walked in. The PA saw us right away and cleaned out mom’s ear. I took mom home and then was on my way. She’s all better now.
Second Meal: Gary surprised me with big food! He made a hearty soup with Kale, Carrots, Onions and Glass Noodle.
For the second course, we had Baked Sweet Potatoes, Baked Tofu, our Millet/Red Rice/Black Rice/Brown Rice blend and Nutritional Yeast. I felt like I hadn’t eaten for days.
Treat: Later in the evening, jet-lagged, I got motivated to make Biscotti. We didn’t have all the right ingredients but I was determined to make it work. We didn’t have enough sugar (evaporated cane juice) but there was plenty of confectioner’s sugar so I used the recommended amount to replace what was needed. We were out of olive oil so I melted some Miyoko’s Cultured Vegan Butter instead. The result was perfect.
Gary made us gorgeous cups of Teecino with Soy Foam, dusted with Cocoa to go with our Biscotti. This is our home.
