What Vegans Eat – Day 1702

First Meal: I am recovering from my jet lag and fatigue. I was motivated to do a little more today and that included making brunch. While Gary slept in I made a big Kale Salad with Onions, Carrots, Celery, Figs, Apples and a Pomegranate Vinegar and Pumpkin Seed Dressing. Sound good? It was!

 
Simultaneously while chopping the salad ingredients I made Buckwheat Crepes. Have you tried this recipe yet? It’s so easy and so good. We filled them with Bananas, Apricot Butter, Peanut Butter and Flaked Coconut.

 
First Meal: After a long day of work I was ready for Green Zenphony. We haven’t been there in a while. I started with the Red Cabbage and Lemon Juice cocktail (no sugar added).

 
I suggested we splurge on the Mixed Appetizer Plate. I did the math – if I got the Veggie Duck Cold Cut for $8.95 and Gary got his Veggie Ribs for $8.50 it would actually cost less to get the $16.50 Mixed Appetizer. It came with a lot more goodies, but they were not the same as what we usually get. It was fun to try everything: Soy Chicken, Roast Duck, Veggie Chicken Rolls, Veggie Roast Pork and sliced Golden Chips. We took our time and didn’t order our main dishes until we finished the appetizers.

 
I chose the Triple Mushroom with Bean Curd for the main, requesting the soft, custard-like Tofu instead of fried.

 
Gary opted for the Sesame Bean Curd, with fried Tofu.

 
They always give us a sweet fruit to finish the meal. Tonight it was Oranges.
