What Vegans Eat – Day 1705

First Meal: Before going to sleep last night, Gary was texting with his cousin and Pumpkin Bread came up. Nancy was going to make some muffins in a day or two. Gary told me he wanted Pumpkin Bread. I told him I would make it in the morning and I did! It was simple. We have been eating very little, if any sugar and we have a jars of Brown Sugar, Granulated Sugar and Confectioner’s Sugar. I just used up the Granulated Sugar in the Biscotti I made last week. Before going to sleep I thought I would use the Brown Sugar in the Pumpkin Bread. It was hard as a rock in the jar. I dug it all out, and put a little at a time in a spice grinder until it was all ground up. I was surprised at how the light the color was afterwards. I put it all in a new jar and used some in this recipe. Here’s the recipe. I served the bread with Miyoko’s Vegan Butter, Peanut Butter and Apricot Butter and we each got half of a gorgeous, bright red Grapefruit.

 
Dinner Meal: I couldn’t wait for a repeat of last night’s dinner: Escarole with Onions and Capers, Purple Potatoes, Sweet Potatoes, Masala Tofu and Pinto Bean Soup,
