What Vegans Eat – Day 1709

First Meal: I wanted to make Corn Pancakes. I wanted them to be thick and fluffy like at Dharma’s in Santa Cruz. I took the time to whip the Aquafaba, but it collapsed when I mixed it in the batter. I have to review some pancake recipes with aquafaba to learn what tricks are used. Do you know? With a Raspberry Coulis they still came out pretty tasty.

 
Second Meal: Today’s early dinner was a rerun of yesterday, which was the intention all along. Plus we included some fresh additions, like farm ripened, organic Tomatoes. They taste like tomatoes! So many tomatoes today have no taste at all.

 
Next up, Romaine Lettuce Salad mixed with the Brown/Red/Black Rice Blend and Tahini Dressing.

 
Gary presented this gorgeous plate of sautéed Red Onion and Escarole and Capers. It was so creative and delicious.

 
The rest of the Purple Potatoes and Purple Sweet Potatoes came out.

 
We had more Pinto Bean Stew, Masala Tofu and Gary’s Cheesy Sauce.

 
Treats: We ordered our Halloween Candy from NaturalCandyStore.com and it arrived today. Here’s what we got. In addition to the Pumpkin Spice Bites, the Dark Chocolate Peanut Butter Bites, the Mini Ocho Coconut Bars and Enjoy Life Allergy Friendly Chocolate Bites, we got Maraschino Cherries (without artificial color) and a Hazelnut/Chocolate Spread called Rawmio.

 
We also got UNREAL Dark Chocolate Peanut Gems for us. They are a vegan spin on M&Ms with colors from natural sources. What a treat! We tried a few.

 
Third Meal: A light last meal of the day consisted of Apples and Peanut Butter.

 
We washed it down with our Green Juice made with Kale, Collards, Celery, Carrots and Ginger.
