What Vegans Eat – Day 1711

First Meal: The last of the Pinto Bean Soup is mine. I am having it for breakfast. It is good. Then it’s off to mom’s house for my weekly visit. I didn’t have anything planned to do for her. I was thinking it would be a relaxing visit. I took my time and did some grocery shopping on the way over to bring home after my visit.
 
Second Meal: Mom’s neighbor Laurie came over and we went to P.F. Chang’s for lunch. I won’t tell you what they ordered but I kept my lunch clean and simple. I had the Buddha’s Feast with five-spice tofu, asparagus, shiitakes, broccoli, and carrots, and no savory (and too salty) sauce and Brown Rice.

 
When we got back to mom’s I discovered one of the cameras had been unplugged and removed. I had to hunt for it and reinstall it. Then I noticed two of the kitchen ceiling light bulbs were out. There was only one in the garage. Fortunately, Laurie came to the rescue yet again with an extra one from her house. I am so grateful mom has her for a neighbor.
 
Third Meal: I got home later than I originally planned. I got started preparing dinner and it was late when we sat down to eat. First course is a creamy Carrot and Red Lentil Soup.

 
Gary prepped the Celery and Carrot Sticks for the freshly made Guacamole.

 
We had a Red Leaf Kale Salad with Pears.

 
We had some Polenta already cooked and chilled. I thought we could slice it and grill the pieces in the oven. Gary prepared a Basil topping to brush on them and I made Tomates Provencal (tomatoes with garlic and herbes de provence) but I baked them rather then cooking them in a sauce pan. I think I prefer them cooked on the stove rather than in the oven. Next time!

 
We shared a small treat, samples of the candy we bought for Halloween.
