What Vegans Eat – Day 1712

First Meal: It’s the weekend, a good excuse for Fruity Corn Waffles. We have them already made so there’s another reason. Gary made a beautiful bowl of Raspberry Pear Coulis and brought out the Rawmio Hazelnut Spread and some Miyoko’s Cultured Vegan Butter.

 
Second Meal: We go on a walk almost everyday. The usual routed takes about 45 minutes. I suggested we go on an adventure, walking through the Flushing Meadow Corona Park to lunch at Bodhai Vegetarian. It’s about a 45-minute walk to the restaurant. I like eating out this way, walking before and after to burn up the extra calories. We took our time when we were seated at the restaurant. The Two Kinds Mushroom Congee was superb today.

 
The Turnip Cakes are a must-have.

 
I discover the Buddha Bean Curd Roll the last time we were here. It’s a new favorite.

 
The big pile of Greens is a requirement, stir fried Pea Pod Leaves.

 
Gary likes the Veggie Lamb Stew in Casserole.

 
We ate everything! No leftover overs. On the walk back we noticed this garden in front of someone’s home. Check out all the hanging zucchinis. Beautiful.

 
Snack: Get these Haagen Daz Peanut Butter Chocolate Fudge Non-Dairy Bars out of the house! They are dangerous.

 
Making Sauerkraut and Green Juice was on my list. Done.

 
Third Meal: We had a light meal of lovely leftovers: Salad, Celery and Carrot Sticks, Guacamole, grilled Polenta plus Black Beans.
