What Vegans Eat – Day 1716

First Meal: Gary usually offers to share his morning tea with me, along with his expertly frothed milk. But I usually have my own pot of some green or white tea. Today I accepted, Teeccino with frothed Cashew Milk. This is decadent.

Time to finish the batch of Steel Cut Oats and Millet Waffles I made a few days ago. How did they last this long? It’s been three days. I served them with Pears, Bananas, and Rawmio. Oh Rawmio, Rawmio!

It’s gorgeous to look at and even more delicious to eat.

Second Meal: I was hungry, Gary was not. I made a pot of Polenta and served it with Nutritional Yeast, and Pumpkin Seeds.

Early in the evening we each had our Green Juices, made with Kale, Collards, Celery, Carrots, and Ginger. This is strong stuff.

Tonight’s dinner consisted of Pinto Beans, Millet, Sweet Potatoes and a sauté of Kale and Red Onions. What tied it all together was pouring Gary’s new cheesy sauce made with Butternut Squash over everything.

My brother was staying over tonight. He teaches late Bronx and then early the next morning and it’s quite a drive back to his home so sometimes he stays in NYC. He came in just as I was serving own recipe better.
