First Meal: Gary made a special Oatmeal today with Blueberries and an Omega-3 plus sprinkle with Flax Seeds, Cinnamon and Walnuts.
Second Meal: Later in the day I made an “everything in the refrigerator” kind of Vegetable Soup that had cooked Acorn Squash as the featured Vegetable. Squash is great in soup. It gives it a little sweetness. Yesterday’s leftover Pizza toppings went in there too, Peppers, Zucchini and Basil.
Third Meal: I had a creative drive today. I set out to do something with the okara I had frozen when I last made soy milk. I made gluten-free Rosemary and Thyme Crackers. Really, really good! We’ll be snacking on these for a while.
I also attempted to make my Turnip Cake recipe. I didn’t have foil to cover the Bain Marie and I used Brown Rice flour instead of White Rice Flour. It was an epic failure, they never firmed up. Like any fail in the kitchen we work to make something out of it. I baked them longer and they turned out crunchy on the outside. We liked them.
