What Vegans Eat – Day 1733


First Meal: Waffles again? YAY! Gary wanted “Cheerios” Waffles which means our Steel Cut Oats and Millet Waffle recipe. He thinks they taste like Cheerios. Cheerios without the glyphosate, because we use organic grains. All the schmears came out: Almond Butter, Peanut Butter, Apricot Butter, Cashew Yogurt and a Raspberry Coulis with chunks of Mango. I made a double batch so you’ll be seeing these again tomorrow.

Second Meal: Tonight’s dinner comes with a toast, with Port. Gary opened a bottle to cook with it so we each got a small glass to drink.

I made a Vegetable Borscht Soup with Beets, Carrots, Sweet Potatoes, Onions and Dill, topped with Cashew Yogurt and Scallions.

Our dinner plate consisted of Baked Sweet Potatoes, Pinto Beans, Marinated Tempeh Nuggets, and sautéed Beet Greens with Garlic, all topped with Cashew Yogurt and Scallions. This is good eatin’!

Our after dinner drink consisted of green juice made with Kale, Collards, Carrots, Celery, Cucumber, Ginger and Lime.
