What Vegans Eat – Day 1734


First Meal: Steel Cut Oat and Millet Waffles are the best! Have you tried them? I couldn’t decide what to put on them so I had everything! One with homemade Cashew Yogurt and Raspberry/Mango Sauce, the other with Almond Butter.

Second Meal: Gary De Mattei, REAL, co-founder, is the best vegan chef, hands down. I have experienced his craft for more than a decade and there is no doubt in my mind. The BEST! Tonight it’s one of the best of his best. A new creation. Pasta with Eggplant, homemade Ricotta and homemade Sauce (gravy) with his own veggie Meatballs. A little port for a sweet finish.

Treats: Later, hours after that wonderful Italian dinner, we shared a vegan Häagen Daz Peanut Butter Chocolate Fudge Non-Dairy Bar. Yum.
