What Vegans Eat – Day 1735

First Meal: We take turns cooking in our house. Today, I took over the kitchen and made garbanzo bean flour omelets, filled with a Spinach Ricotta mixture. The seasoned Ricotta was leftover from Gary’s amazing Eggplant dish yesterday.

 
Second Meal: Borscht is back! I love this soup and look forward to making more soon. It’s perfect topped with homemade Yogurt.

 
For a second course we had all the yummy leftovers, Gary’s Eggplant Pasta dish, Veggie Meatballs and Pinto Beans.

 
Treat: Our evening treat, Strawberry Banana Cashew Yogurt Serve Serve.
