What Vegans Eat – Day 1758

Green Juice: Today is one of those push, push, push days and cram everything in. I started with a Green Juice, made with Kale, Collards, Celery, Carrots, Lemon and Ginger.
 
First Meal: Tomorrow we are leaving for a long weekend in San Jose, California. That means today, I need to visit my mom. I got to her place and surveyed her refrigerator like I always do so I know what she needs to order for food for the week. There was a box of organic Butter Lettuce I had bought her last week, unopened. Sigh. Mom likes salads a lot but she rarely makes them for herself these days. I made us a big Salad and boiled the remaining Potatoes. This Salad had Green Olives, Onions, Walnuts and Garbanzo Beans. A good salad.

 
Second Meal: I could not stay too long with Mom. I got home in the afternoon and Gary served up some Carrot and Red Lentil Soup.

 
Next we tried the Blue Hubbard Squash with Gary’s Polenta Stuffing and Roasted Vegetable Gray from Thanksgiving. Yum.

 
Third Meal: I had a project that had to be finished today. I also had to meet my friend Beth who was visiting from Costa Rica and the clock was ticking. I worked fast and managed to get on a subway in time to meet her at Le Pain Quotidien near Columbus Circle. We shared the Harvest Bowl with Roasted Butternut Squash, Organic Apples, Farro, Kale, Romaine, Toasted Sunflower Seeds, and a Citrus Apple Dressing

 
I had a cup of Organic White Bean and Kale Soup.
