First Meal: Back at mom’s for a quick visit before the end of the year. We went to the Cheesecake Factory for lunch. I was feeling extra hungry and got the Edamame for an appetizer.
The Vegan Cobb Salad always has my name on it.
Second Meal: Back at home we had a simple stew of Black Beans, Corn and our Rice Blend with Tahini Dressing. My bowl was adorned with Shiitake Mushrooms.
Treat: Last but not least for the day, I made Blueberry, Peanut Butter, Cashew Yogurt and Soy Milk frozen desserts.
