What Vegans Eat – Day 1793


First Meal: Some days I start cooking not knowing what I will be making. Today was one of those days. I began by steaming Brussels Sprouts and boiling Yellow Potatoes. Then I got creative with some Tempeh. I cut it in chunks and added it to sautéed Onions. I made a Mustard and Apricot Butter Sauce that I was very please with.

Green Juice: This evening’s green juice had Kale, Celery and Carrots.
Second Meal: We tried another of the gifted Rancho Gordo bean packages. Tonight it’s Italian with Pasta Fagioli. Gary made it with Marcella Beans, Brown Rice Pasta, Carrots, Celery, Onions, Garlic, Brussels Sprouts and his homemade Tomato Sauce.

It’s a winner.
