What Vegans Eat – Day 1795


First Meal: I know what you are thinking. “They haven’t had waffles in awhile.” That’s right! I corrected that this morning with Garbanzo Bean Flour Waffles served with smashed Bananas and Apricot Butter.

Second Meal: I haven’t seen mom in a week so it was time to visit. As usual, we went to lunch with her neighbor Laurie to the Cheesecake Factory. I am predictable. I always get the Vegan Cobb Salad.

Third Meal: Gary had the “Gary Classic Dinner” ready when I got home: Baked Tofu, Mashed Potatoes and Kale with Onions. This is the REAL vegan man’s steak and potatoes.
