What Vegans Eat – Day 1802

First Meal: We had leftover over Banana Coconut Cream from last night’s dessert. I could hear it screaming in my ear to be a part of breakfast. We poured it over Steel Cut Oats with Blueberries, Apples, Coconut and Walnuts.

 
Second Meal: Gary had bought Einkorn flour the other day. He had a desire for bread. We don’t eat a lot of bread and I try to avoid wheat. I brought home a loaf of Ezekiel Sprouted Wheat bread a couple of days ago and today I would make fresh bread with the Einkorn flour. I was a little rusty – if I make bread it’s typically gluten-free and the process is a little different. But it all came back. I decided to make some Pita Pocket breads, a loaf and a couple of rolls. The Pita baked fast so we got to try one with Miyoko’s Vegan Butter right a way.

 
Here is my loaf and the rolls. I sliced the loaf and it went right into the freezer. We’ll toast a few slices of it soon.

Third Meal: We had the rolls with dinner. It was one of my most favorite meals! Gary made his Baked Tofu, along with Roasted Onions and Peppers. Plus he made a creamy Pesto with fresh Garlic, Walnuts, Basil, Spinach, Miso and Nutritional Yeast. I love it and can put it on anything. We made our own Roasted Vegetables with Pesto Sandwiches on the fresh rolls. Let’s do this again tomorrow.
