First Breakfast: This is what I call a Hotel Breakfast. And I mean a European-style quality hotel breakfast with fresh breads. I made bread last week and froze most of it. We toasted some this morning and brought out the Almond Butter and homemade Prune Butter. This bread was made with organic Einkorn flour and you can taste the difference. Every bite was amazing. So yummy and flavorful.
Green Juice: Our green juice today had Kale, Collards, Celery, Lemon and Ginger.
Second Breakfast: Today’s salad had Romaine Lettuce, Rancho Gordo Flageolet Beans, Parsley, Tomatoes, Onions and Tahini Dressing.
Then there were the Purple Sweet Potatoes. I had picked them up at Trader Joe’s. At first I thought they were a steal at $1.29/lb. I typically pay $1.99/lb at Whole Foods. But it turns out they were $1.29 each. They were so worth it. These were some of the best Purple Sweet Potatoes we have ever had, sweet and cakey like doughnuts. I took one and bent it to try and make it look like a doughnut. How’d I do?
We also had Millet with Tahini Dressing. A good dinner!
