What Vegans Eat – Day 1817


First Meal: I love waking up on a Saturday morning and baking. I went to sleep with Gooey Apricot Danishes on my mind. I made up the recipe four years ago based on a memory Gary had and haven’t made them since. In reviewing the recipe I came up with some improvements. The result was wonderful! Here they are before baking.

They get topped with a gooey mixture of cooked dried Apricots, Cinnamon, Walnuts and Almonds.

They were served with Berries and homemade Cashew Yogurt.

I made the yogurt extra thick. It’s rich.

Second Meal: Gary wanted dinner in big bowls today. He’s so hip. Our bowls had chopped Romaine Lettuce, Sweet Potatoes, Brown/Red/Black Rice Blend, Rancho Gordo Flageolet Beans, seasoned Tempeh and Cashew Yogurt.
