What Vegans Eat – Day 1821


First Meal: For dessert or breakfast, I am nuts over Thin Stackers with Almond Butter and Date Paste. Sliced Oranges and a little Cashew Yogurt on the side completed the plate.

Second Meal: Today was housecleaning day for mom and I sit with her so the housekeeper can do her work. Afterwards I made lunch: Dr. Praeger’s Burgers, Brussels Sprouts and a Power Greens Salad with Green Olives, Pecans, Garbanzo Beans and Red Onions.

Third Meal: When I got home I was rewarded with this stunning dish made by Gary: Roasted Stuffed Bell Peppers with Mushrooms, Potatoes, Carrots and Celery served with a Romaine Lettuce Salad.

The Bell Peppers were stuffed with our Brown/Red/Black Rice Blend. All those gorgeous roasted veggies were topped with a Tomato Cashew Cream Sauce.
