What Vegans Eat – Day 214


Breakfast: It’s a smiling pile of Polenta! This Breakfast Polenta was served with Chopped Pecans, Coconut, Flax Seeds and Soy Milk.
Daily Green Juice: Kale, Celery, Carrots, Ginger, Lemon
Dinner: We had a late lunch or an early dinner. Either way it was phenomenal. Gary made Baked Tofu, Bake Sweet Potato Fries and a Vegetable Soup with Chard, Onions, Carrots, Celery, Chick Pea Miso and his own Chinese Spice mix. Still working on the bottle of orange juice from our Saturday brunch I decided to freeze some into popsicles, make some into ice cubes for future smoothies and the remainder I diluted with a lot of water and had that with the meal.
Evening: We sat down to watch a little late night television with Steve Colbert. I made Teeccino with Soy Milk Froth and a sprinkle of cinnamon.
I knew we’d be up a while. I had soaked some Adzuki Beans earlier and decided to cook them. When they were done, we couldn’t resist eating them.
