What Vegans Eat – Day 251

Breakfast: There is so much food in the house! I left early to go to the dentist and when I returned there was a big pot of creamy polenta waiting for me. I added some sliced apples and topped it with Cashew Cheese and enjoyed it with some Earl Grey Tea. I also nibbled on some of the food show leftovers: tofu masala, tortilla chips and fingerling potatoes.

Daily Green Juice: Collards, Kale, Celery, Carrots, Lime
 
Lunch: I did not imagine that this salad was going to be this good. It was spectacular. So fresh made with Strawberries, Pomegranate Seeds, topped with tender Butter Leaf Lettuce with a simple dressing made of Fresh Lime Juice and a sprinkling of Nutritional Yeast.

The dessert plate was amazing with Biscotti Finger Cookies, S’Mores with Dandies, Chocolate Fondue and Graham Crackers, big, juicy green Grapes and Strawberries.

Dinner: After all the rich food and sweet treats, I craved lentils and made a big pot. When Gary tasted them he said they were delicious and asked me what I put in them. Nothing. Nothing but lentils. They are so good all by themselves.
