What Vegans Eat – Day 304: Travel Edition


Breakfast: After 2 days away from home we needed oatmeal. We were prepared. We had Rolled Oats with Blueberries, Apples, Raisins, Bananas and Soy Milk. I had green tea.
Lunch: We were going to a big Holiday party that evening and we did not know what kind of food would be there. We wanted to have a filling, nutritious lunch. We made simple Black Bean Tostadas with Avocado, Baked Tofu and Tomatoes.
For dessert, we had another simple, satisfying favorite – Banana with Peanut Butter.
Dinner: The party was at La Rinconada Country Club and there was one table of great vegetables. I had the Arugula Salad, the Asparagus with Roasted Red Peppers and a Kohlrabi dish, all very good. In addition we munched on mixed nuts and drank Sparkling Water and Chai tea.
