What Vegans Eat – Day 308: Travel Edition

Breakfast: We had one more day in California. It was time to clear out the mini refrigerator. We had leftovers from the last two days – Spicy Cha Cha and Brown Rice from the Vegetarian House and Sautéed Broccoli, Brussels Sprouts and Farro from Pasta Pomodoro. Plus there was an entire package of unopened sprouted tofu and 1/2 of an avocado. I mashed the tofu and avocado and combined this with the leftovers and heated it all together. It made an amazing Tofu Scramble!

Lunch: There were corn tortillas, ripe avocados and a few cherry tomatoes. I heated up the tortillas and broke them in pieces, chopped the tomatoes and mixed them with mashed avocado and we had a quick guacamole with chips along with some clementines

Dinner: It was our last night and we went out with Gary’s nephew Josh to the Veggie Grill. I tried the Seoul Bowl, with chargrilled veggie-steak, carrots, house-pickled red onions, cabbage, arugula, scallions, sesame seeds on a bed of stir-fried supergrains and rice with Korean gochujang sauce. This is not going to be a favorite. I did not care for the veggie-steak, it had an unpleasant after taste. Although I like spicy foods the sauces were too salty for me. I am better off sticking to the simpler, cleaner dishes.
