What Vegans Eat – Day 310


Breakfast: Back from our California trip what could I make for breakfast? I was surprised that the scallions we had left in the refrigerator a week ago were perfect. I made scallion pancakes and filled them with black beans and garbanzo beans. I had brought an avocado back with us that I mashed and mixed with more scallions. It looks like tacos with corn tortillas but they are scallion pancakes, a nice twist.
Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon
Dinner: We were putting together our end of the year report and fundraising letter and had not had a chance to go food shopping. Green Zenphony restaurant in Rego Park saved the day. We ordered in our favorites – Veggie Roast Duck Noodle Soup, Veggie Roast Pork Noodle Soup, Sautéed Chinese Broccoli and Brown Rice.
