What Vegans Eat – Day 328


Brunch: After having the Lentil and Avocado Salad yesterday at Le Pain Quotidien I wanted more lentils. And we had just bought a bunch of my favorite kind, dried pink lentils. They cook very fast. I was hungry and for a moment I thought the lentils would not cook fast enough. I took out the remaining Lasagna from New Year’s Eve and heated that up as well. The lentils and the lasagna were ready at the same time so I had both! There was plenty of Quick Cashew Cheese Sauce leftover from yesterday too.
Daily Green Juice: Kale, Collards, Celery, Carrots, Ginger
Dinner: Gary made a lentil soup with the lentils I had cooked earlier in the day. He added carrots and onions and spices. I baked some sweet potatoes and yukon gold potatoes. We topped our soup bowls and potatoes with more Quick Cashew Cheese Sauce.
Evening: The last of the Flourless Chocolate was gobbled up.
