What Vegans Eat – Day 403

Breakfast: It’s Sunday. We’ve got the Sunday New York Times, the new T Magazine and homemade cornbread. I love when Gary makes one of my recipes, they always turn out better! He made our favorite Corn Bread topped with Pumpkin Seeds. Sneak preview: I made homemade Prune Butter to fill the Hamentaschen cookies I was planning to make for Purim.

Gary made it to go with the Black Beans I had cooked the day before and the very ripe Avocado we had that needed to be smashed and eaten.

Lunch: All the breakfast ingredients returned on top of a bed of Greens and smothered in nutritional yeast. Outside there was a light dusting of snow on this first day of Spring. Dust is our name for Nutritional Yeast and as we spoke of the snow dust outside, there was a major dump of dust on my salad!

Daily Green Juice: Kale, Collards, Celery, Carrots

Dinner: Finally, finished off the last of the Mung Bean Vegetable Soup. It had a good run. I had just finished the 2nd draft of my book. Since the story includes the films Ocean’s 12 and Ocean’s 13, we decided to celebrate with a film fest. We watched all three, starting with Ocean’s 11. Now on to the 3rd draft of my book!
