Breakfast: Today is a repeat of yesterday’s breakfast: Steel Cut Oats with Blueberries and Bananas, served with Grapefruit and Green Tea.
Lunch: Tomorrow is the big day – high school graduation for Gary’s nephew Kyle and Gary’s birthday. We helped prepare some of the food for the party – Quinoa Vegtable Salad, Tricolor Pasta Salad with Broccolini, Kale Salad with Mango, Onions and Avocado. Gary snipped the stalks off the broccolini and I grabbed them to make a soup for lunch. I cooked the broccolini stalks in water, blended them into a purée and returned it to the pot. I added coconut milk, curry powder and cayenne. The result was Coconut Curry Broccolini Soup. We nibbled on everything else as we made them.
Dinner: It always makes me chuckle when we spend a lot of time preparing food for an event. We end up going out to eat! We headed over to the Vegetarian House for a pre-birthday dinner feast. It had a heavenly start with Heavenly Salad.
We indulged with Spicy Cha Cha, Veggie shrimp, with a spicy breading that makes you want to get up and dance, Cha Cha Cha!
Of course we had the Flying Buddha.
And I tried something new – Rainbow. I’ve had variations of this dish in other vegan restaurants in NYC and it was especially good here at Vegetarian House. It’s a “fish” dish with layers of bean curd skin wrapped in seaweed and served in a sweet and sour sauce. Anyone who still says vegan food is boring must try this dish. It is anything but boring.
