What Vegans Eat – Day 473: Special Travel Edition

Breakfast: It’s Gary’s birthday! Yay! But no special breakfast here in the guest house we are staying in. First, we weren’t hungry. Second, we had to run. We had a graduation to catch at Archbishop Mitty High School for Gary’s nephew Kyle. Third, We knew there would be lots big food later, and cake – birthday cake, of couse. I drank some water before leaving.
 
Lunch: After the very lovely ceremony out in the hot sun we headed over to the cool and shady Veggie Grill for a birthday brunch. I had Papa’s Portobello: Grilled mushroom, chopped tomato, basil and garlic pomodoro, caramelized onions, cilantro pesto, lettuce, red onion, chipotle ranch. Gary got his favorite B-Wing Salad with tasty Buffalo Wings over chopped romaine, avocado, celery, tomato corn salsa, creamy ranch dressing and some Yukon Gold fries. It was GREAT!

Dinner: Later in the day was the graduation party and birthday celebration for Gary. While most of the crowd filled their plates with barbecued meats, sausages and cheese, Gary and I enjoyed our plant-based offerings: Kale Salad with Mango, Onion, Avocado and Lime; Quinoa Salad with Peas, Bell Peppers, Onions and Corn; Tri Colore Pasta Salad with Broccoli, Baked Potato and Veggie Chili made by Maura, a family friend.

Wait!! Don’t forget the tofu! (We almost forgot to bring them out.) Gary had made Lacquered Baked Tofu with Sesame Seeds.

When it was time for dessert, Gary was presented with a vegan carrot cake made by Black China Bakery and sold at Whole Foods.
