Breakfast: Ground Flax Seeds, Fresh Strawberries, Walnuts and Steel Cut Oats smothered in Coconut Milk – I could eat this every day and never tire of it.
Lunch: My very dear friend Nancy that I have known since high school drove down from San Francisco for a visit. We hiked the Lexington Reservoir County Park for almost two hours, while we chatted about everything. Then we went over to Andale’s for one of my favorite lunches – Tofu Tacos, Fahita Style. Mm. Their ice tea is very refreshing with a light fruity flavor.
Snack: Back at the guest house after Nancy had left, Gary and I relaxed a little. I made a snack of Avocado and Green Onions on Corn Thins.
Dinner: Late in the evening I made a Not-Quite-Summer Night’s Salad with Mixed Greens, Black Beans, Mango, Nutritional Yeast and Lime Juice.
