What Vegans Eat – Day 487: Special Travel Edition


Breakfast: Rolled Oats are back with Soy Milk, Blueberries, Walnuts and Flax Seeds.
Lunch: Gary’s nephew Josh took his ACT exams in the morning and we celebrated by going over to the Veggie Grill. I got the Papa’s Portobello again served bread-free Kale Style (served on top of steamed kale) with grilled mushroom, tomato basil and garlic pomodoro, caramelized onions, cilantro pesto, lettuce, red onion, chipotle ranch. It came with a cup of luscious Roasted Corn in Creamy Coconut Milk Soup. Guess what Gary got? The B-Wing Salad of course; Buffalo Wings over chopped romaine, avocado, celery, tomato-corn salsa, creamy ranch dressing. And Josh got his favorite the Grilled Chickin’ with avocado, lettuce, tomato, red onion, cilantro pesto, chipotle ranch.
Dinner: This time I got cooking. I made a multi colored Carrot and Red lentil Soup. Red lentils melt into all flavor when cooked long enough and the carrots gave the broth a light sweetness.
The second course was a Kale Salad massaged with Lime Juice and Avocado.
