What Vegans Eat – Day 506: Special Travel Edition


Breakfast: I did it! I soaked the Chia Seeds and included them in our morning Rolled Oats with Apples, Raisins, Almonds and Soy Milk, served with Irish Breakfast Tea and Sliced Grapefruit.
Lunch: Just a ripe, juicy Pear and some Green Tea did it fine for me.
Daily Green Juice: I’ve been taking a break while here in California from daily green juices. If you’ve noticed I have not been mentioning them much. But today Gary brought a green juice from Whole Foods. I enjoyed it. It was like getting together with an old friend.
Dinner: We began with a big, beautiful Mixed Green Salad tossed with a dressing made with yesterday’s Red Lentil and Celery paté and garnished with Baked Tofu made with lots of fresh lemon juice.
I had soaked, cooked and peeled Fava Beans earlier in the day. Gary warmed them up with the leftover Chopped Salad we had yesterday and spread it on Ezekiel Sprouted Grain Tortillas.
Evening: Gary’s cousin Nancy stopped by and surprised us with sweet treats! She brought a couple of flavors of Amy’s Cool Scoops and Almond Dream and some fresh Blueberries. Party time! I had the Mint Chocolate Chip.
We made a pot of Teavana Rooibos Blueberry Bliss and let it cool down a little before drinking since it was a hot night.
