Breakfast: We have been away from home since May 18. Aside from our oatmeal cereals we often make waffles and pancakes and have many recipes for them on this site. We have been missing them so much. With access to another big beautiful kitchen, this one with a 6 burner industrial stove WITH A GRIDDLE, we could not pass up the opportunity to make one of our favorite pancake recipes. The day began with Pancakes! While I prepared the batter Gary brewed the Irish Breakfast Tea and steamed the Soy Milk and dusted it with Cinnamon.
We made a big stack of Sourdough Corncakes with a fresh Strawberry Coulis. They were better than ever.
Lunch: We were sated a long time. I had bought some round zucchinis at Staff of Life the week before, wanting to stuff them. I used to do this all the time when I lived in France. I prepared the dish to eat later for dinner and we ate the extra stuffing for lunch made with Brown Rice, Red Lentils, Zucchini, Carrots, Red Onions, Nutritional Yeast, Pumpkin Seeds, Herbes de Provence, Black Pepper, Mushrooms.
Dinner: I used to also make Tomates Provençal while in France and had to bring them back to pair with the Stuffed Zucchini.
Gary made the big Romaine Lettuce and Avocado Salad with our old favorite, Seed Caesar Dressing. It felt like home!
